Celebrating Hanukkah with Aly Raisman

Favorite Hanukkah food?

Potato latkes and kugel.

Aly’s potato latkes

1.5 lbs onions, quartered
3 lbs Yukon gold potatoes, scrubbed & peeled
2 large eggs
¼ cups all purpose flour
3 tbsp fresh parsley, chopped
2 ¼ tsp salt
2 tsp baking powder
1 tsp black pepper
Vegetable oil (for frying)

What to do:

1. Using a food processor with a grating insert, grate the potatoes and onions together.

2. Transfer the mixture to a clean dish towel and try to squeeze out as much of the liquid as possible.

3. Transfer mixture to a large bowl and add the eggs, flour, parsley, salt, baking powder and pepper. Mix until the flour is absorbed.

4. In a medium-sized heavy-bottomed pan over medium-high heat, pour in around ¼ inch oil. Once the oil is hot, use a heaping tablespoon to drop the batter into the hot pan, then flatten out with a spatula. Fry in batches.

5. When the edges are brown and crispy (after about 5 minutes), flip the latkes. Cook another 5 minutes on the other side, or until your latkes are nice and browned.

6. Transfer latkes to a plate lined with paper towels, and sprinkle with salt.

7. Repeat until all of your latkes are fried.


Gloria’s heavenly kugel

8 oz egg flakes or noodles
6 eggs
24 oz sour cream
¼ lb butter
8 oz cream cheese
6 tbsp sugar
1 tbsp vanilla

What to do:

1. Preheat oven to 350 degrees F.

2. Cook noodles based on package direction, then strain.

3. In a large bowl, combine noodles with remaining ingredients and pour into a greased baking dish.

4. Bake until kugel is bubbling, the edges are brown and the center feels set when you test it, about 30 to 40 minutes.
